Nightshade-free Shepherd's Pie

Nightshade-free Shepherd's Pie

Cauliflower is a wonderful and versatile vegetable, but I was left disappointed when I tried using it as the mashed topping for shepherd's pie. This recipe utilizes tropical starchy roots as the mashed potato replacement in a nourishing, nightshade- and dairy-free version of the classic dish.

Nightshade-free Unrolled Cabbage Rolls

Nightshade-free Unrolled Cabbage Rolls

Want cabbage rolls, but don't want to spend the time wrapping them up? This is a recipe for unrolled cabbage rolls that you can make in the oven or slow cooker. It also uses my nightshade-free "no-mato" sauce that's suitable for the autoimmune paleo protocol. If you're not on the AIP and want to use a tomato sauce instead, there's an option for that as well.

Easy Aji Amarillo Meatballs and Guacamole

Easy Aji Amarillo Meatballs and Guacamole

I love cooking with Peruvian hot peppers -- especially the bright, hot, and surprisingly fruity aji amarillo. This is a quick and easy recipe for meatballs flavored with this wonderful chile. They pair perfectly with a big side of guacamole for dipping. Enjoy!

Slow-Cooker Cuban Picadillo (with hidden, heart, liver, and kidney)

Slow-Cooker Cuban Picadillo (with hidden, heart, liver, and kidney)

Picadillo is a spiced ground beef and vegetable hash and is a traditional dish in Spain, Costa Rica, Puerto Rico, the Dominican Republic, Mexico, Cuba, and, interestingly, the Philippines. This recipe is for the Cuban style and sneaks in a healthy dose of grass-fed beef organ meats! It is so flavorful and well-spiced that you can't even tell the heart, liver, and kidney hidden alongside the ground beef.
